Unlike white potatoes, sweet potatoes won’t send your blood sugar soaring. And one medium-sized sweet potato has only 117 calories.
A few ideas for how to eat sweet potatoes:
- Wash and pierce skin of two sweet potatoes and microwave on high for 6 to 8 minutes. Mash with a dollop of olive oil, or with cinnamon and a teaspoon of brown sugar.
- Toss a peeled, cubed sweet potato with a little olive oil in a small baking dish. Roast at 450 degrees, stirring frequently until slightly browned.
- Whip up a healthy, tastier alternative to french fires: Slice four sweet potatoes, toss with 3 tablespoons of canola oil, spread on baking sheets and bake at 425 degrees until tender, about 20 minutes.
