Russian Tea Cakes (Snowballs)
Yields: 4 dozen
Ingredients:
- 1 cup of butter (2 sticks)
- 1/2 cup sifted confectioners’ sugar
- 1 teaspoon vanilla
- 2 1/4 cup sifted flour
- 1/4 teaspoon salt
- 3/4 cups finely chopped nuts
Instructions:
- Mix butter, sugar, and vanilla
- Mix in flour and salt
- Stir in nuts
- Chill for at least 1 hours
- Preheat oven to 400 degrees
- Create 1-inch balls on an ungreased pan
- Cook for 10-12 minutes
- While warm, roll in more confectioners’ sugar
